Oven Drying

If you don’t have good weather for sun drying or you want to speed up the process, you can use an oven.

First, preheat your oven to the lowest temperature setting, usually around 100°F to 150°F (38°C to 66°C). Then, place the cleaned star anise on a baking sheet lined with parchment paper. Make sure the star anise is in a single layer so that it dries evenly.

Put the baking sheet in the oven and leave the door slightly ajar to allow the moisture to escape. Check on the star anise every hour or so and turn it over. It usually takes about 3 to 6 hours for the star anise to dry in the oven.

Be careful not to set the oven too high, as that can burn the star anise and ruin its flavor.

Dehydrator Drying

A dehydrator is another great option for drying star anise. It’s more precise than oven drying and can give you consistent results.

Just follow the instructions that come with your dehydrator. Usually, you’ll set the temperature to around 100°F to 120°F (38°C to 49°C) and place the star anise on the dehydrator trays. The drying time can vary depending on the dehydrator, but it usually takes about 6 to 8 hours.

Step 4: Storing the Dried Star Anise

Once the star anise is completely dry, it’s time to store it. I like to use airtight containers, like glass jars or plastic bags. Make sure you label the containers with the date of drying.

Store the dried star anise in a cool, dark place, like a pantry or a cupboard. This will help to preserve its flavor and aroma. Dried star anise can last for up to a year if stored properly.

Tips and Tricks

  • If you’re using an oven or a dehydrator, you can add a slice of bread to the drying chamber. The bread will absorb any extra moisture and help the star anise dry faster.
  • Don’t overcrowd the star anise when drying it. Good air circulation is key to getting it dry evenly.
  • If you notice any mold on the star anise during the drying process, throw it away immediately. Mold can spread quickly and ruin the whole batch.
